把切成块的豆腐放进180度高温的食用油煎至表皮稍硬、色泽金黄,然后炒香蒜茸、姜丝、菇丝、肉丝,加进汤水和调料,放进炸过的豆腐略焖成菜,即为芳香味浓的红烧豆腐。豆腐改炸为煎或飞水亦可。
