1、黑豆豉的份量不宜太多,它的咸香味较重,用太多会抢去水蛋的味道,容易喧宾夺主。*~u9Bx-~
2、虾米要尽量泡软,和豆豉一起尽量剁碎,这样和水蛋同蒸后,才不会影响水蛋嫩滑的口感。
