胖胖小厨 新年之贺岁篇---台湾卤肉

人是不是越到过年放假的时候越懒惰啊?就像我,连菜都快懒得烧了,很怀念老底子,过年时烧一大锅的油豆腐烧肉,还有浸一大盆的虾油鸡,每天弄一点吃吃,很香的。3xV.?H9Z5H%O
小胖我很爱吃肉,每天几乎无肉不欢,虽也知道多吃不好,可就是熬不住,只好自我控制一点。Yd

这次我买了几块五花肉,打算做一个台湾卤肉,完工后装在乐扣乐扣的盒子放进冰箱,春节长假里每天要吃的时候拿出来,切片吃,炒菜吃,是不是也很方便哦。L!s ~:V0P

五花肉,生抽,老抽,油葱酥压碎成末。米酒,五香粉或王守义十三香,冰糖或白糖。9c5q7k$^)@s&h+T
油葱酥是做台湾卤肉的必备材料,我是在淘宝上买的,好像是18块500克。没有油葱酥,自己用小洋葱炸也行,不过味道好像要逊色一点。!CT!r`F$C$c

五花肉切大块,在开水里煮5分钟,去血水,沥干后,在油锅内两面炸一下。m s"\9o4LibKX4m*v

开中火,在肉上倒入生抽和老抽,加入冰糖,煮至粘稠冒泡后,加入水没过五花肉,再倒入米酒,油葱酥三勺。

把烧好的肉捞起放进保鲜盒内,在冰箱内冷藏30分钟,就可以拿出来切片,再浇上卤汁即可。

记得以前过年有醉肉、糟肉、咸肉、酱油肉,满满的大拼盘,一桌子菜。那时候过年的蛋铰都是我负责做。/fMyZu
现在过年改成去饭店吃,总觉得节日的气氛反而不浓了

米酒做的 味道要好一些!老抽是上色的,生抽提鲜味的,自己把握一下!
