手擀长寿面

手擀面做起来很简单,主要是面要活的硬些--“软面儿饺子、硬面儿面”。今天我是用一个鸡蛋黄加淡盐水活的面,面硬而且鸡蛋面不好活,所以觉得蛮锻炼的,呵呵。先把面活匀,盖上湿布醒20分钟,然后再活,面团光滑,不粘手。

然后把面擀成薄约2毫米的圆皮,要擀得厚薄均匀。因为是鸡蛋面,所以几乎不用面扑。擀好后,折叠几层,切成细条、抖散。5U,g"JB+G"a

另外炒的是XO酱炒虾仁,酱还是box做的,味道很足,用一点点橄榄油炒酱和虾仁、青红椒几分钟就行了,忘了照这个图了。面条下熟后,过一下冷水,这样利口一些。然后配上卤和黄瓜丝,就可以吃了~Z@D1AF4Zl
